This authentic Coca Bread recipe makes it very easy to make this appetizing snack. It is a very popular treat which can be bought in panaderias (bakeries) all over Majorca and is also enjoyed in Ibiza and Menorca.
The Coca Bread is sold with a variety of toppings in Majorca. I have included a popular salad type topping suggestion for you to try. You can always experiment with your own favourite toppings.
The recipe below will make enough to serve about 4 people.
|500 g||Plain Flour|
|1/2 cup||Olive Oil|
|10g||Active Dry yeast|
Dilute the yeast in warm water.
Pour the flour into a large bowl.
Make an indentation in the middle of the flour and add the yeast, salt and ½ cup of olive oil into the hollow.
Gently mix the dough, adding more flour if needed until the dough forms.
Cover the dough with a damp warm cloth and place the bowl in a warm place until the dough rises.
When the dough has risen, grease a square or rectangular oven dish with olive oil and line it with the dough, making the dough higher at the edges.
Cover the dough surface with the topping of your choice (see topping suggestions below) and sprinkle with a little olive oil.
Bake in a preheated oven to 180 degrees for approximately 25-30 minutes.
The length of time it takes to cook really depends on how thick you have made it.
While you are waiting for the dough to rise, you can prepare the toppings.

This Trempó Topping makes a very appetizing topping for Coca Bread, however …
… I think it makes a nice salad on its own.
To make a simple but delicious salad dressing for the Trempó Salad, I just mix 8 spoonfuls of olive oil to one spoonful of vinegar, a squeeze of lemon juice and a pinch of salt.
I understand that not everybody loves olives the way that I do, so if you are not too keen on olives, just leave them out.
- Green Peppers
- White Onion Topping
- Salt, Parsley and Basil to taste
- Pitted Green or Black Olives (optional)
- Topping Preparation
Place the tomato in hot water for a few minutes. Dry and peel back the skin.
Wash the Green Pepper and remove the seeds.
Chop the Tomato, Onion and Green Peppers and slice the olives (optional).
Cover the dough with the above ingredients and sprinkle a little salt, parsley and basil over the topping to taste. Place in oven and bake according to instructions listed in the Coca Bread instructions above.
Try cutting the Coca Bread with your favourite toppings into little squares and serve them as munchies for your guests at your next party. Kids love it …
