Aioli – A Very Pungent Spanish Garlic Mayonnaise Dip

Aioli (Garlic Mayonnaise Dip)

Aioli (pronounced a – ee – olee) is a dip widely used in the Spanish Bars and Restaurants in Majorca. It is traditionally served with tomato, olive oil, bread and a small bowl of olives as an appetizer.

When you take your holidays in Majorca, and dine in a Spanish Restaurant, make sure you order this as your appetizer.

This is probably the easiest Spanish Recipe I know of, and well worth making if you are a garlic lover.

To serve this appetizer you will need:

  • Fresh slices of Traditional Spanish Round Bread (see recipe) or French Stick Bread
  • Several Tomatoes cut in half
  • Fresh Extra Virgin Olive Oil
  • A small bowl of Aioli and,
  • A small bowl of Olives (if you fancy Olives).

This appetizer is normally served with a small bowl of olives. I was quite surprised to learn that the local people never eat the last olive in the bowl as it is considered “bad luck”. I love olives so much that …

… I often get my hand smacked when I reach for the last one.

To enjoy this appetizer, rub the bread with tomato and drizzle a small amount of olive oil on top. Take a spoonful of the garlic dip and …

… spread it all over the bread.

You may wish to serve this appetizer with separate bowls of fresh Tomato Salsa and Pesto Salsa …

… just add a small amount of olive oil to each of the salsas and stir lightly.

Our favourite Spanish restaurant serves the aioli appetizer this way.

So, instead of rubbing the tomato and oil on the bread, you would spread one or both of these salsas on the bread before topping the bread with the Aïoli.

Other Ways to Use Aioli

When in season, I buy the small Majorcan Pimiento Padron (Hot Green Peppers) and fry them quickly in olive oil, and then sprinkle a small amount of sea salt on top. I serve them with a small bowl of the Aïoli dip.

Aïoli is also very nice served with fresh vegetables such as carrots, celery, red peppers, spring onions, broccoli, etc. We have even used it as a chip dip. In fact, it is a great party dip for those who love garlic. In fact …

… should only take you 5 to 10 minutes to make.

When I asked the cook at my favourite Majorcan Restaurant how much garlic to use in this recipe, he told me that

… he uses two cloves of garlic per person.

Two cloves of garlic per person makes a really pungent tasting dip, however …

… the amount you use will entirely depend on how much you like garlic.


  • Between 4 – 8 Garlic Cloves
  • 2 Egg Yolks (see my Money Saving Tip below for use of left over egg whites)
  • 10 Fluid Ounces (300 ml) of Extra Virgin Olive Oil
  • 2 Tablespoons of Lemon Juice
  • 1 Tablespoon of Fresh Breadcrumbs
  • Sea Salt and Ground Black Pepper

Money Saving Tip:

You don’t need to throw away the egg whites. To save money, I put the egg whites aside. When I am finished making my Alioli, I immediately make meringues with the egg whites and sugar and top them with my fresh fruit salad (strawberries, blueberries, kiwi, banana, peach, lemon juice and small amount of sugar) for a nice light dessert/sweet. Topped with whipped cream this delightful dessert/sweet will surely impress.


If you have a Garlic Crusher, crush the garlic, and then in a small bowl, blend it into a paste with the back of a spoon.

Now, place the garlic paste into a food processor, along with the two egg yolks and blend. Don’t forget to scrape down the sides of the bowl of the food processor.

With the food processor still blending, slowly pour the olive oil in through its feeding tube until the mixture thickens.

Add half of the lemon juice and the breadcrumbs and process for a few more seconds.

Turn off the processor, take the lid off and taste the mayonnaise. If you think it requires a little more lemon juice, add this now and process once more.

Finally, add the salt and pepper to your liking.

Place the dip in a bowl and cover with plastic film until you are ready to serve and enjoy. It can also be stored in a small Tupperware bowl with a tight lid and should last up to 7 days in the refrigerator.
